WHere is a simplified version of a cocktail from a new menu. This is a party-sized pre-mixed that is packed with tastes associated with festive period, making it excellent for a celebration. Save the extra citrus syrup to use in breakfast cocktails, puddings, or for another batch of this cocktail.

Serves 10 servings
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Cocktail (makes 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
Making the Cordial: Combine all the items in a pot, bring to a gentle boil, stirring so the sugar melts. Next, take off the heat allowing it to cool fully. Pour to a sterilised bottle, close it keeping it in the refrigerator, it can be stored for around four weeks.
For the Premix: Mix every liquid ingredients in a big jug, leave to sit for 60 minutes, then filter it best through muslin, so it's completely strained.
For serving: Pour 85ml of the batch mix into your mixing glass packed with ice, gently stirring carefully for one minute to chill. Pour into a cold coupe glass or a similar vessel, decorate with a few cranberries adding the final touch using a light spray with the mandarin essence above the glass.
